Eggnog Ice Cream Sandwiches
1 cup light brown sugar
1/4 cup granulated white sugar
2 cups all-purpose flour
1/2 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1 tsp nutmeg
8 oz unsalted butter, room temp
8 egg yolks
2 tbs molasses
2 tbs whole milk
2 tbs brandy
2 tsp vanilla extract
Vanilla Ice Cream
Directions
Preheat the oven to 375F.
Cut the butter into cubes and place into bowl.
Add both sugars.
Mix until smooth.
Add and mix in egg yolks.
Add molasses, milk and brandy, mix.
In a separate bowl, add flour, salt, baking soda, nutmeg, cinnamon, and allspice.
Mix with fork to combine. Combine both bowls and mix.
Scoop sought to create balls and place on baking sheet.
Bake for 9 minutes.
Let cookies cool completely.
Scoop ice cream and place between two cookies, making a sandwich.
